No menu, no à-la-carte ordering. Le Panier offers a creative blind tasting experience built on seasonal produce — and adapts to your allergies, as far as possible.

Vegetarian? No problem, the Chef adapts to your tastes. Just let us know when you book.

I'm not trying to impose a menu. I want to tell the story of what the season offers, that very morning. Every service is an open letter to the produce.

Aurélien Martin,
The Chef

Trained in fine-dining houses in France and Switzerland, Chef Aurélien Martin honed his craft through travels in Australia, New Zealand and Canada. From those experiences he kept a cuisine open to the world, inspired by Mediterranean terroir and seasonal produce.

For him, every dish is a meeting of French savoir-faire and creative boldness.

Marie Lacoue

Alongside the Chef, Marie Lacoue imagines the restaurant's culinary journey each month.

Creative and passionate, she also designs the pairings that elevate every stop — whether a carefully chosen wine or a house cocktail imagined to extend the experience.

Every product is carefully selected. The Chef chooses fresh, seasonal ingredients with special attention to quality and flavour accuracy.

Most of our primary produce comes from the Marché aux Fleurs in Nice, on the Cours Saleya — a vibrant place where colours, scents and textures inspire the Chef's creations. This patient, precise work gives rise to a living cuisine, full of emotion and rich with the seasons.
